This sauce gets is sweetness from the ripe fresh mango and the molasses, this is a very versatile recipe as it can be served with noodles, rice, mashed potato and loads of fresh vegetables.
Leftovers are also great as it reheats well the next day.
Serves 6
Low calorie spray
1 Large Onion, diced
1 Large Red Pepper, seeded and diced
3 cloves of Garlic, coarsely chopped
1tsp Salt
Freshly ground Black Pepper
1/2 tsp ground Allspice
100mls Red Wine Vinegar
3tbs Dark Molasses Sugar
2tbs Worcestershire Sauce
2tbs Fresh Lime Juice
500mls Passata
1 Large ripe Mango, peeled, pitted, and diced
½tsp of Lazy (prepared) Chilli
6 Large Chicken Breasts trimmed and cut into 4 long pieces.
Spray a deep non-stick lidded pan with the low-calorie spray and place over a medium heat. Add the chicken pieces a few pieces at a time and cook until golden brown, remove and set a side, cook the remainder of the chicken and place with the rest. Add the onion, red pepper stirring a few times until tender, about 3 minutes. Add the garlic, salt, black pepper, and allspice and cook, stirring for another 2 minutes. Stir in the vinegar, molasses sugar, Worcestershire sauce, lime juice, and passata cooking for a further 5 minutes. Add the mango and the lazy chilli.
In the same pan blend with a stick blender until smooth.
Add the cooked chicken back into the pan with the tomato sauce and cook gently for 30 minutes until the chicken the thoroughly cooked.
