Crunchy Granola #take 2

I don’t know why I didn’t make granola before, I probably thought it was too much faff. But it’s not! It’s simple, fail safe and also fills your house with the most delicious aromas!! The only problem is that it doesn’t last long, everyone wants to eat it straight away, especially when it forms into scrumptious, crunchy clumps.

300g Jumbo porridge oats

120g Mixed Seeds (I use Waitrose Mixed Seeds) or you could mix your own and include all your favourites

60g Roasted, salted peanuts (any nut will work, I just happen to have a tree nut allergy)

2 tbsp coconut oil

100ml Canadian Maple syrup

2 tbsp Clear Honey or Agave

3 tbs Apple juice

  1. Preheat the oven to 150 C and line a large baking tray with some grease proof paper.
  2. In a large bowl mix together the oats, seeds and nuts.
  3. Gently heat together the coconut oil, maple syrup, honey/agave and apple juice in a small saucepan, until the coconut oil has melted then pour over the oat and nut mix until well combined.
  4. Tip the mixture into the baking tray and gently pack down with a wooden spoon (I find this makes better ‘clumps’) and bake for a total of 30 minutes until golden brown.
  5. Leave to cool completely and transfer to an airtight container.

This makes a great on-the-go breakfast.  Pack it into vintage style jars (or any jar, I just like these!) layered up with fresh fruit and fat free Greek style yoghurt.  Delicious!!
