Apricot Vanilla Porridge

The addition of sweet plump dried apricots which are a good form of natural fibre transforms this ordinary porridge into something to wake up for. Its worth the expense of using proper Vanilla Extract rather than a Vanilla Essence or Vanilla Flavouring.

Serves 4.

600ml Cold Water

¼ tsp Salt (optional)

175 gms of Rolled Oats

100 gms of Dried Apricots Chopped

1tsp Vanilla Extract

80 gms Raspberry Jam or any other Jam you prefer

200ml Semi Skimmed Milk

Method

Combine the water, salt (if using), oats and dried apricots in a medium saucepan.

Bring to a boil, reduce the heat to low and simmer, stirring occasionally for about 5 minutes or until the oats are tender.

Remove from the heat stir in the vanilla and semi skimmed milk and stir until combined.

Divide the porridge between four serving bowls, divide the jam between the four bowls and stir slightly to combine.
