Ploughman’s with Spinach and Basil Hummus

Oh my goodness, I’m in love with this flavour! And it improves with time, make it an hour before you’re planning to eat it and the flavours will have mellowed to perfection.

Serve it as part of a super ploughman’s; chicken drumsticks, hard boiled eggs, low fat cheeses, sliced vegetables and fruit.

  • 1 tin chickpeas drained and rinsed
  • 80 g fresh spinach
  • 2 cloves garlic peeled
  • ½ lemon juiced
  • 10 g fresh basil
  • 2 tbsp fat free natural yoghurt
  • 10g Italian hard cheese grated
  • 2 tbsp water
  • salt and pepper to taste

This couldn’t be easier……. put everything into a blender and whizz it until it’s lovely and smooth. You can add more water if you find it a little sticky.

This will last for about 3 days in the fridge (if there’s any left)
