This delicious recipe turns plain mashed potato into something special. Its great when entertaining or makes a tasty side dish with sausages, grilled chicken, fish or a good old fashioned pie.
If you like your mashed potatoes rustic you don’t even need to peel them which makes a great short cut, just make sure they are nice and clean and free from eyes and marks.
Serves 4
1 kg of maris piper potatoes chopped into bite sized pieces
100mls of chicken stock, warmed
100gms half fat crème fraiche
1 1/2 tbs fresh chopped chives
100gms low fat cheddar cheese
25gms grated parmesan cheese
Salt and fresh ground black pepper to taste
Method
Preheat the oven to 200 c, gas 6, 400f
Boil the potatoes in a pan for 15 minutes or until tender, drain them then add the chicken stock, and mash until smooth.
Add the crème fraiche, 50gms of the grated cheddar cheese, salt and pepper, and chopped chives and mix together until combined.
Turn into an oven proof dish sprinkle with the remaining 50gms of grated cheddar cheese and the grated parmesan.
Place in the preheated oven for 30minutes until golden brown and bubbling.
