Frozen Romantic Rose Bark

Sometimes all you need is something sweet!

These are the times that can sabotage my weight loss. If I don’t have something to hand that will satisfy that craving then I have been known to make a dive for the biscuit tin or a raid on the kids treat drawer. And then the damage is done!

So we’ve come up with this for those times, super easy (and fun) to make;

500g fat free Greek yoghurt

2 tbsp maple syrup

1 tsp rose water (I use Nielsen-Massey)

A handful of strawberries (sliced into small pieces) and raspberries (whole)

2 tsp freeze dried raspberry pieces (from the baking aisle)

A few edible petals – optional (I used rose and geranium petals, please make sure that any petals you use are edible)

Line a baking tray with cling film (quick tip; I used a melamine tray which worked really well but for this first bark I spread it a bit too thin and it melted too quickly later on. So in future I’d still use a tray but I’d make a thicker spread). And make sure you have space in the freezer for it to lay flat.

Stir the maple syrup and rose water into the yoghurt and spread evenly over the tray but not too thinly. Scatter the strawberries and raspberries evenly over the mixture, gently pressing into the yoghurt. Gently place the petals, if using, in between the fruit, making sure that they’re pressed flat into the youghurt. Sprinkle the whole bark with the dried raspberry pieces.

Freeze for at least 4 hours then take out and break or cut into pieces. Put the pieces back into the freezer as quickly as possible and keep in there in an airtight container.

Enjoy straight from the freezer whenever you feel that sweet tooth calling.
