Summer Lunch Pasta Bowl

This lunch possibly one of my absolute favourites, it’s so versatile depending on what is in my fridge at the time I decide to make it. I love it with ham, cold chicken, prawns, tinned tuna and even cubes of mature cheddar cheese, basically anything you have in your fridge that you enjoy will make an amazing pasta salad bowl.

I always have cold cooked pasta in the fridge and I am one of these people who prefer my pasta on the slightly under done side, I hate it when it becomes mushy because its over cooked but that is my preference.

If you need to save time you can prepare enough for 2 days and pack it straight into plastic lunch boxes so you can just take it from the fridge and go to work

Serves 2

500g cold cooked pasta shapes

100g good quality ham, chopped into bite size pieces

1 small red onion, finely chopped

2 tomatoes, chopped

A good handful of fresh spinach or any salad leaves that you prefer

2 tbs of low-fat mayonnaise

2 tbs of tomato and chilli chutney, I like The English Provender, but you may like a different one.

Freshly ground black pepper

Method

In a large mixing bowl, mix the mayonnaise, chutney and pepper to make your dressing.

Gently combine the cooked pasta into the dressing, then add your ham, red onion, tomato and spinach.

Pile into the lunch boxes and chill overnight.

Your lunch is now ready for the next two days.
