This dessert really satisfies a sweet tooth but without the guilt. We served this for our ‘virtual’ dinner party and it not only tasted delicious but looked really pretty too.
Serves 4
12 sponge fingers, broken up into pieces
120ml strong black coffee
500g fat free Greek yoghurt
2 tbsp sweetener granules
1 tsp vanilla extract
150g fresh raspberries (frozen will work too) plus a few reserved for decoration.
Dark chocolate to decorate
Soak the sponge fingers in the coffee for 5 minutes.
Mix the sweetener and vanilla extract into the yoghurt.
Lightly crush the raspberries to release a little of the juice.
Ready to assemble; divide half of the sponge and coffee mixture between 4 glasses or small bowls, top with half the yoghurt mix and then half the raspberries and their juice, repeat with another layer of each.
Finely grate the dark chocolate over the top and add the reserved raspberries.
Cover and chill for at least an hour.
