Honey Halloumi & Apricot Salad

Honey Halloumi & Apricot Salad. The combination of Halloumi and apricot in this salad is a marriage made in heaven add honey and you’re straight into the honeymoon! Fresh flavours; perfect for picnics, luscious for lunch or it’ll even make a delightful dinner

Serves Six

200g ciabatta or other slightly stale bread

1 tbsp extra virgin olive oil plus a little extra for drizzling onto the bread

6 fresh apricots (but a 420g tin of apricots, drained will work too)

6 sprigs of mint

120g of mixed salad leaves

Juice of 1 lemon

2 x 250g halloumi

2 tbsp honey

Slice and toast the bread under the grill until lightly charred. Drizzle with a little olive oil then tear into small chunks.

Halve the apricots and remove the stones if using fresh ones. Quarter and then halve until you have 8 slices from each fruit then place in a large mixing bowl.

Tear in the mint leaves, and salad leaves and the torn toasted bread. Mix the olive oil with the juice of the lemon and season well then pour over the salad and toss.

Slice the halloumi into 1½cm slices. Heat a large frying pan on a medium heat and when hot add the halloumi slices and fry for around 3-4 minutes, or until golden underneath. If you get a lot of moisture, carefully drain it off to speed up the browning process. Gently turn each slice over and repeat until both sides are browned nicely. Drizzle with the honey for the last minute.

Place the halloumi on and around the salad and serve.
