Raspberry &Chocolate Cookies

These cookies are so easy to make, taste divine and hit the chocolate spot, and who would know they are healthier than other chocolate cookies as they don’t have any fat in them. These cookies are a great start to get kids cooking, everyone will love them.

Makes 12

2 egg whites

175g icing sugar

40g cocoa powder

2 tsp. plain white flour

A few drops of vanilla essence

50g milk chocolate chips

50g fresh raspberries, torn into small pieces

Method

Preheat the oven to 180c/gas mark 4/fan oven 160c. Line two baking sheets with parchment paper.

Whisk the egg whites in a large, grease free bowl until light and frothy, but not stiff. Gradually sift in the icing sugar, cocoa powder and flour, whisking after each addition. Add a few drops of vanilla essence, leave the mixture to stand for 20 minutes to thicken.

Place 12 Teaspoonfuls of mixture on the baking sheets, leaving space between them. Dot with the chocolate chips and the raspberry pieces.

Bake for 12 – 15 minutes, until firm and cracked on the surface, leave for 5 minutes before transferring the cookies to a wire rack to cool.
