The base for this hummus is perfect for adding any flavours to. I’ve used roasted red peppers from a jar to this one but you could easily add sun dried tomatoes, spinach, lemon and extra garlic, caramelised onions……. the options are endless

1 x 400g chickpeas, rinsed and drained
1 clove of garlic crushed
1 lemon, juiced
1 tbsp fat free Greek yoghurt
1/2 tbsp extra virgin olive oil
Salt and pepper to taste
1 large roasted red pepper from a jar (I use Cooks & Co)
Water to loosen
Add all the ingredients to a food processor and blend until the consistency is as smooth as you like it (I always like a little texture left to mine). Add a little water to loosen the mix as required.
Season to taste.
Serve with a selection of vegetable crudités and/or sliced toasted Pita breads.
