These fruity baked oat squares are so versatile, once you’ve tried them we’re sure you’ll add them to your “Favourites”.
Most of us would have everything needed in our store cupboard, and its incredible to put them all together to make these easy and deliciously fruity squares.
They can be eaten on their own, or with Greek yogurt for breakfast or ice-cream or custard as a pudding, hence, why they are so versatile.

Makes 9 squares
300g jumbo oats (normal porridge oats would work too)
150g light brown sugar
2tsp baking powder
1tsp salt
1tsp ground cinnamon
2 large eggs, lightly beaten
200ml semi-skimmed milk
50g butter, melted
1 eating apple, chopped
1 fresh nectarine or peach, chopped
150g fresh blueberries
Method

Preheat the oven to 180c, gas 4, 350f
In a large bowl combine the oats, brown sugar, baking powder, salt, and cinnamon.
In another bowl combine the eggs, milk and butter, add to the dry ingredients, stir well.

Stir in the apple, nectarine and blueberries.
Grease a square pan measuring 20cm x 20cm with some butter and pour in the oat mixture.
Bake uncovered until a knife inserted into the centre comes out clean, this will take about 35 – 40 minutes.
Leave to cool in the tin, then cut into 9 squares.
