Nutty Nana Bars

Mmmm! Two of our favourite foods together in one cake, smooth peanut butter and sweet bananas combine to make these thick muffin-like bars.

They’re great with your mid-morning coffee or excellent in lunch boxes or with custard or ice-cream as a dessert.

Makes 9 bars

100g butter, softened

150g soft brown sugar

100g smooth peanut butter, plus 30g extra for dotting before cooking.

1 large egg, at room temperature

2 large ripe bananas, mashed

1tsp vanilla extract

150g whole wheat flour

1tsp baking powder

1/4tsp salt

Icing sugar for dusting

Method

Preheat the oven to 200c, gas 6, 350f

In a large bowl, beat the butter, brown sugar, and peanut butter until blended.

Gradually beat in the egg, banana and vanilla. In another bowl sift together the flour, baking powder and salt, then gradually add to the butter mixture and mix well.

Lightly grease a 20cms x 20cms tin and line with non-stick baking paper.

Spread the mixture evenly into the tin and dot over the extra 30g of peanut butter and gently swirl into the cake batter with a knife, bake for 20 – 25 minutes or until a toothpick comes out clean from the cake.

Cool on a wire rack, cut into 9 bars, or smaller if you prefer and sprinkle with icing sugar to serve.
