These easy flatbreads couldn’t be simpler to make, and all you need will probably already be in your cupboards;

Makes 4 – 6
Low calorie cooking spray
250g self raising flour
2 tbsp sunflower oil (groundnut oil and rapeseed oil work just as well)
150ml water
Spices, seeds and salt for flavouring (optional)
Method
In a large bowl, mix together the self-raising flour, sunflower oil and water to make a soft dough. Lightly dust the work surface with flour.
Knead slightly to bring it all together.
Divide the dough into 4-6 balls and leave to rest for 5 mins. Roll out each ball into a large circle (about 0.5cm thick).
Sprinkle one side with any spices you want to use and a grind of sea salt. Roll over just once to push the spices, seeds, salt into the dough.
Place a non stick pan over a medium heat. Spray the tops of each circle with a little oil to coat and fry the breads in the hot pan for 1 min each side until puffed, golden and cooked through, flip to brown the other side.
These are just perfect for serving alongside curries (add garlic and coriander to replicate a naan bread), wrapping around a Middle Eastern dish (add Zatar and cumin seeds), dipping into hummus (add paprika and salt), dunking into a tagine (add cinnamon and paprika) or can even be made sweet (add sugar and cinnamon).
