Smashed New Potatoes

These delicious crispy new potatoes make a really nice change from plain boiled new potatoes, when they baked and come out of the oven, they are golden, crispy and delicious.

Your guests with be very happy that you have made extra ones, but if on the rare occasion there were any left over they reheat very well, either back in the oven or in a frying with your egg and bacon for breakfast.

Serves 4 – 6

Preheat your oven 200c, gas 6, 400f

2kgs baby new potatoes, cleaned and tidied up of any little bits

Low – calorie spray

Salt and freshly ground black pepper

Method

Place your cleaned new potatoes in a saucepan, cover with cold water and bring to the boil.

Boil for 20 minutes or until tender.

Drain the water from the new potatoes and leave to dry out for a few minutes.

Spray two large oven proof baking trays with low – calorie spray and tip the potatoes evenly between the trays.

Lightly crush each potato with a potato masher to squash them and create your crispy surface.

If you get any little bits on the masher just clean them off with a knife and put them back in the pan, these will all go crispy as well.

Spray some more low – calorie spray over the potatoes and place them in the oven for 20 minutes, then give them a shake and place them back in the oven for another 20 minutes until golden brown and crispy.

Serve sprinkled with salt and serve with chicken, fish, steak or with breakfast.
