These delicious little homemade sausages wrapped in thin slices of carrot and courgette are a cross between a sausage roll and a pig in a blanket (or in striped pyjamas!) but with a fraction of the calories.
They are fantastic for packed lunches, picnics, food on the go or just a tasty snack straight from the fridge.
I love these for lunch with a jacket potato and a green salad, or if I am in a hurry stuffed into a warm wholemeal pitta bread.

1 small onion, finely chopped
2tbs chicken stock
Salt and pepper
500g 5% lean pork mince
2tsp chopped fresh thyme
2tsp chopped fresh sage
1tsp garam masala
½ tsp paprika
Low – calorie cooking spray
1 large courgette
1 large carrot, peeled
Green salad to serve

Method
Put the onion, stock salt and pepper in a small saucepan over a low heat and cook the onion for 5 minutes until soft. Leave to cool.
Put the pork mince, herbs, spices, salt and pepper in a bowl and mix, then add the cooled onion.
Divide the mixture into 6 balls and then form into a sausage shape, spray a non- stick griddle pan with low- calorie spray and cook the sausages on all sides which will take about 15 minutes, this will give you lovely char grilled marks on the sausages.
If you don’t have a griddle pan, they can be cooked in the oven for 15 minutes on 180c, gas 4, 350f
When the sausages are cooked, set aside and cook the carrot and courgette slices in the griddle pan for 1 minute on each side this will also give them nice griddle marks, you can also use a frying pan for this.
Wrap the sausages in the carrot and courgette ribbons alternating them, leave to cool completely, cover and chill they will keep for 2 days in the fridge, serve with mixed green salad.
