Citrus Rainbow Salad

I made up this delicious and colourful salad with the help of my generous and keen gardening neighbours who everyday leave me scrumptious garden produce.

I used a spiralizer but grated veg work well or you could use an ordinary vegetable peeler to make ribbons.

If there are any ingredients that you do not really like, then why not make up your own salad.

We paired this salad with the Indian Dry Beef and Potato Curry, but it would be equally tasty with any meat or fish that you enjoy.

Serves 4

1 green courgette, spiralized, grated or ribboned

1 yellow courgette, spiralized, grated or ribboned

1 large carrot, spiralized, grated or ribboned

½ cucumber, spiralized, grated or ribboned

6 cherry tomatoes, cut into quarters

1tbs extra virgin olive oil

1 small lemon, juiced and zested

Salt and freshly ground black pepper

Method

Mix all the spiralized, grated and chopped vegetables in a big bowl.

In a small bowl whisk together the olive oil, lemon juice, lemon zest salt and freshly ground black pepper and pour over the vegetables.

Mix well and serve immediately
