Savor the Flavour: Paprika is made by drying a particular type of sweet pepper, then grinding them to a fine, rich red powder. It’s adds such a deep, delicious flavour to a dish and we’ve teamed it up here with succulent pork and luscious tomatoes.

Serves 4
Low- calorie cooking spray
2 onions, chopped
400g pork fillet, trimmed of any fat and cut into bite size pieces
250g mushrooms, sliced
1 ½ tbs smoked paprika
Salt and freshly ground black pepper
1tbs tomato puree
200ml chicken stock
100ml soured cream, plus extra to serve
300g easy cook rice, cooked according the packet instructions.

Method
Heat a large lidded non-stick saucepan and spray with the low – calorie spray.
Add the onions and gently cook for 5 minutes, add the mushrooms and pork, increase the heat to high and cook for 5 minutes until golden brown.
Add the smoked paprika, salt, pepper and tomato puree and stir until combined.
Add the stock, reduce the heat to low and simmer for 30minutes until the pork is tender.
Mix in the soured cream and gently stir to combine.
Serve with the cooked rice, but if you prefer this pork would also be delicious with cooked noodles or mashed potatoes.
