If you’re looking for a filling yet slimming soup, look no further. Full of vegetables and lovely, warm spices, this hearty soup is perfect for making you feel cosy on a chilly day.

Serves 6
Low calorie cooking spray
1 small white onion, peeled and diced
1 tbsp Lazy Garlic cloves
2 medium carrots, diced
2 sticks celery, diced
1 large sweet potato, peeled and diced
1 tbsp cajun spices
1 bay leaf
100g mushrooms, sliced
100g sweet corn
700ml vegetable stock
1tbsp cornflour
300ml milk
250g cooked mix of wild rice and basmati rice (or you could use one or the other)
200g cooked chicken
2 large handfuls of kale, roughly chopped with thick stems removed
Seasoning to taste
Spray a large pan with cooking spray, heat and gently sauté the onion until softened. Add the garlic and cook for another minute. Add the carrots, celery and sweet potato and bay leaf and the Cajun spices, stir to coat the vegetables with the spice then add a splash of the vegetable stock and continue to cook whilst scraping all the flavours from the bottom of the pan.
Add the mushrooms and the sweet corn, stirring all the time to blend the flavours then slowly add the rest of the stock.
Allow to simmer until the root vegetables are soft.
Blend the cornflour with the milk and add to the pan along with the chicken, rice and kale and leave to thicken and warm through.
Taste and season with salt and pepper and serve.
