This really couldn’t be easier, mix the sauce together and chuck it in the slow cooker with the chicken thighs…….. sit back, relax and presto! 5 hours later dinner is ready. Serve it with some speedy stir fried vegetables and noodles and job done and family fed and happy!!

Serves 4.
500g chicken thighs, you can leave them whole or cut them into large chunks.
4 tbsp apple juice
2 tbsp tamarind paste
2 tbsp honey
2 tbsp sweet chilli sauce
1 tbsp grated ginger
1 garlic clove crushed
Toasted sesame seeds to serve.

Noodles

Put the chicken thighs into the slow cooker, set on medium.
Whisk all the ingredients of the sauce together and pour over the chicken, mix to cover the chicken in the sauce.
Cook on medium for five hours.
Towards the end of the cooking time prepare your vegetables and noodles and stir fry, add the sauce from the slow cooker to the wok/pan and stir through. Serve with the chicken on top and a sprinkling of toasted sesame seeds.
