Moist tender delicious spiced pork mince cups with a cracked egg in the centre then baking in the oven they are very easy to make and will please the whole family as a lunch, snack or food on the go.
We enjoyed ours with healthy fries and a rocket and tomato salad.

Makes 4 large pies
Low – calorie spray
500g 5% lean pork mince
½ tsp paprika
½ tsp dried thyme
Salt and freshly ground black pepper
4 medium eggs
4 cherry tomatoes, sliced, plus more to serve
2 spring onions, cleaned and chopped
Rocket leaves to serve

Method
Preheat the oven to 200c, gas 6, 400c F
Spray 4 holes of a large muffin tin pan with low – calorie spray
Mix the pork, paprika, thyme, salt and pepper in a bowl and divide the mixture into 4 equal size balls.
Press each ball into a round shape between your hands and gently press each round into the base and sides of the muffin pan holes, forming a cup shape, making sure that they stand 2cms higher than the top of the tin. Bake for 10 minutes.
Remove the muffin tin from the oven and mop up any liquid in the bottom of the pork case with some kitchen paper.
Crack an egg into each pork case and season with more black pepper, place the sliced tomatoes on top and bake for another 10 – 12 minutes or until the eggs are set and the pork cases are golden brown.
Sprinkle over the sliced spring onions and enjoy hot warm or cold with salad and healthy fries or new potatoes.

Leave to cool before packing into lunchboxes.
