Curried Rice and Kale

This is a lovely side dish to serve with a curry or a warming casserole. You could substitute the kale for spinach if there are any crazy kale-haters out there!

Cooking spray
1 teaspoon cumin seeds
3 garlic cloves (1 teaspoon), finely chopped
½ teaspoon ground turmeric
½ x 180g bag of kale leaves, chopped
700g cups cooked basmati or long grain rice
Salt to taste

Spray a large pan with cooking spray and set over medium-high heat.

Sauté the cumin seeds until they start to pop. Add garlic, and cook, stirring, for 1 minute, or until fragrant and lightly browned. Add ground turmeric and sauté until aromatic.

Stir in kale and season with salt.

Cover and cook, stirring occasionally, for 2-3 minutes, or until the leaves are wilted.

Add cooked rice. Cook, stirring, for another 2 minutes.
