Juicy chunks of chicken, lean bacon, onions, and sweet potato, all quickly cooked in a sweet and salty, sticky sauce and garnished with sesame seeds and spring onions. Delicious served with rice or noodles. A very quick mid – week dinner, or perfect for a Friday Fake-Away I am sure the whole family will enjoy.

Low – calorie cooking spray
400g chicken thigh fillets, skin and bones removed, chopped
1tsp sesame oil
800g sweet potato, roughly chopped
3 lean rashers of back bacon, roughly chopped
3tsp fresh thyme, chopped
2 medium onions, sliced
2tbs soy sauce
1tbs honey
1tsp cornflour
60ml water
1tbs sesame seeds, toasted
3 spring onions, chopped

Heat a wok or large non – stick frying pan add the sesame seeds and lightly toast until golden brown, remove and set aside until later.
Spray the same pan with low – calorie cooking spray.
Add the chopped chicken in batches, stir fry until tender, remove, put on a plate and set aside.
Spray the pan with more some low – calorie spray, add the sesame oil, sweet potato, sliced onions and bacon and stir fry until the sweet potato is tender, about 10 minutes.
Add the thyme and fry for2 minutes, stir all the ingredients together
Stir in the chicken, soy sauce, honey.
Blend the cornflour with the water and stir together, add to the pan and stir until the sauce boils and thickens.
Garnish with the sesame seeds and chopped spring onions

This sounds good. I love sweet meat, and especially matched with yams. Bubbles and I ate a lot of them together.
