Crispy new potatoes, peppers, onions, soft cherry tomatoes, and succulent spicy pork meatballs all slow baked together with garlic, chilli and olives. An amazing colourful healthy and filling delicious traybake, a real crowd pleaser.

Serves 4.
1kg baby new potatoes, halved
1ts lazy garlic
Low – calorie cooking spray
2 red onions, cut into wedges
2 red pepper, sliced
500g lean pork mince
1tsp dried mixed herbs
1tsp ground cumin
1tsp ground coriander
Salt and freshly ground black pepper
1/2tsp lazy chilli
175g cherry tomatoes
75g green pitted olives
150g low – fat natural yogurt
¼ cucumber, coarsely grated, excess liquid squeezed out.
Small bunch of fresh basil

Method
Preheat the oven 200c, gas 6, 400f
In a large bowl combine the minced pork, mixed herbs, cumin, coriander, salt and pepper, mix well and roll into 12 balls.
Spray a deep oven proof baking tray with low – calorie cooking spray, put the new potatoes and garlic on the tray and roast for 20 minutes.
Add the onions, pepper and meatballs to the tray, spray with some more low – calorie cooking spray, sprinkle with salt and pepper.
Return to the oven for 10 minutes, then add the tomatoes and olives and stir together. Roast for a further 15 minutes
Mix together the yogurt and cucumber in a bowl, season with salt and pepper. Serve the meatballs and vegetables with the basil leave torn and sprinkled over and drizzled with the yogurt and cucumber.
