Date Night!! Want something delicious for this week’s romantic night? Tender chicken, crisp pieces of plum and bok choy all deliciously coated in a sweet and tangy sauce and served with zesty rice. Tangy and Zesty that’s a recipe for Date Night ❤️

Serves 2
150g basmati rice
300ml boiling water
1 chicken stock cube
Low – calorie cooking spray
280g lean chicken thighs, chopped
Salt and freshly ground black pepper
2 red plums, stoned and chopped into small pieces
1 bok choy, chopped widthways
1 spring onion, thinly sliced
½tsp lazy garlic
½ tsp lazy chilli
1 lime, zested and juiced
2tbs hoisin sauce
½ tsp sugar

Method
Put the rice into the boiling water add the chicken stock cube, bring to the boil, reduce the heat to low and cook for 10 minutes with the lid on, turn the heat off keep the lid on and cook the rice in its steam for another 10 minutes.
Spray a large non – stick frying pan with low – calorie spray, add the chicken, salt and pepper and stir fry for 5 minutes, add the chopped plums and cook for another minute.
Add the bok choy, garlic, chilli stirring regularly for 2 minutes until the bok choy is cooked.
Stir in the hoisin sauce and sugar, fluff up the rice with a fork and stir through the lime zest.
Divide the rice between two bowls and top with the stir fry sprinkled with the spring onions and a wedge of lime to squeeze over.
