This delicious thick and creamy soup is packed with tasty and colourful vegetables making it very filling and a great way to achieve your 5 a day.
What is so amazing about soup that if the recipe has something in it that you don’t like, for instance celery, then you could easily change it for something else, like butternut squash or swede which would all work just as well.
We enjoyed our soup with Mel and Roo’s Squash Pepper and Basil Loaf

Serves 6 – 8
Low – calorie cooking spray
150g celery, cleaned and chopped
1 large onions, chopped
350g carrots, peeled and chopped
2 large leeks, cleaned and chopped
400g potatoes, clean unpeeled and chopped
1ltr of chicken or vegetable stock
Salt and pepper
Sprig of fresh rosemary, chopped
100ml semi – skimmed milk
2tbs fat free natural yogurt
Small bunch of fresh parsley, chopped

Method
Spray a large non – stick lidded saucepan with low – calorie cooking spray.
Add all the vegetables to the pan the gently fry for 10 minutes stirring occasionally.
Add the stock, salt, pepper and rosemary put on the lid and gently simmer for 30 minutes until all the vegetables are tender.
When the soup is cooked, liquidise the soup with a stick blender until smooth, if you prefer you can leave the soup chunky and with texture the choice is yours. Add the milk and stir to combine.
Garnish the soup with a dollop of natural yogurt and a sprinkle of fresh parsley.
Serve with crusty bread.
