Quick, easy and very satisfying for a lazy Sunday Brunch.

Serves 4.
Cooking spray
500g small potatoes, cooked (with skins on) and cubed
500g mushrooms, thickly sliced or quartered depending on size
2 garlic cloves, crushed
2 tbsp thyme leaves
80g cheddar, grated
4 eggs (I used duck eggs for a bit of a change)

Heat oven to 200°C.
Spray a large oven proof pan with cooking spray and sauté the potatoes, mushrooms and garlic until mushrooms start to soften and the potatoes start to brown.
Stir in half the thyme and cook for 1 min more.
Sprinkle with the cheese and the remaining thyme then make four ‘wells’ in the mixture and break an egg into each ‘well’.
Bake in the oven for 12-15 mins until the eggs are set and the cheese has melted. Serve with baked beans 😋
