Fizzy Scones

Who’s for afternoon tea? You just have to try these!! Low calorie and fat free and super, super, simple to make! Use fizzy water, lemonade or you could even try Prosecco!!

150g self-raising flour

2 tbsp (50g) thick, fat free vanilla yoghurt, plus extra for brushing

7 tbsp sparkling water or lemonade

Method

Pre-heat the oven on 180C, 350F, gas mark 4.

Put all of the ingredients into a bowl and stir with a spoon until the mixture becomes a dough-like consistency. If at this stage it seems still too wet add a little more flour.

Flour your work surface well and flatten out the dough, kneading very gently (too much kneading will make the scones chewy). Flatten out and cut with a 4cm scone cutter, you should get 6 small scones out of this mix.

Place on a baking tray and brush with some extra yoghurt, then bake for 12-15 minutes.

Serve warm
