A fun a filling Mexican dish ideal for a date night. Crisp Taco shells filled with delicious spicy beef and loads of low- fat grated cheddar cheese served with a crisp green salad; this recipe make a fantastic date night dinner for two.

Serves 2
Low – calorie cooking spray
1 onion, chopped
½ tsp lazy garlic
1 green pepper, deseeded and chopped
1 red pepper, deseeded and chopped
½ tsp cayenne pepper
200g extra lean mince beef
1tbs Worcestershire sauce
1tbs tomato puree
100ml beef stock
4 taco shells
50g half-fat cheddar cheese, grated
Salt and freshly ground black pepper
Green salad to serve

Method
Heat a frying pan and spray with low – calorie cooking spray.
Add the onion, garlic and peppers and cook for 3 – 4 minutes, until starting to soften.
Sprinkle in the cayenne pepper and add the minced beef. Cook for 4 – 5 minutes, stirring occasionally, to brown all the meat.
Add the tomato puree, beef stock, Worcestershire sauce and seasoning and bring to a simmer.
Simmer for 12 – 15 minutes, until the liquid has been absorbed.
Heat the taco shells according to instructions on the pack.
Spoon the spicy mince mixture into each taco shells. Sprinkle each one with grated cheese and serve with a crisp green salad.
