Spicy Pork Noodles

A bowl of spicy noodles with tender strips of pork and colourful, healthy vegetables. Quick and delicious, from cupboard to table I’m just 30 minutes.

Serves 4

400g pork tenderloin, cut into strips

225g egg noodles

Low – fat cooking spray

3 spring onions, chopped

100g mange tout

1 red pepper, deseeded and chopped

75g beansprouts

2tbs fresh coriander, chopped

Salt

For the marinade

4tbs soy sauce

2tbs honey

2tsp Dijon mustard

2tsp Chinese five spice

Method

Place the pork in a bowl and pour over the marinade ingredients. Mix well and chill in the fridge for at least 20 minutes.

Place the egg noodles in a pan of boiling water salted water and cook for 4 minutes, drain and reserve.

Heat a wok or large frying pan and spray with the low – calorie cooking spray. Add the pork and stir fry for 2 – 3 minutes, add the spring onions, mange tout and red pepper cook for another 3 – 4 minutes.

Add the noodles to the pan and stir well to mix with the pork and vegetables.

Finally add the beansprouts, stir fry for 2 – 3 minutes and then serve in bowls sprinkled with the chopped coriander.
