Smokey Sweet Potato Soup

Yummy! This is one soup you’ll want to make again and again. You can leave the chorizo off if you’re watching calories/fat but honestly, it’s only a bit and it makes such a lovely, spicy, crunchy topping that we think it’s worth it.

Serves 6 as a very filling lunch.

Low calorie cooking spray
2 medium onions, finely chopped
650g sweet potatoes, peeled and chopped
450g carrots, peeled and chopped
1 tbsp smoked paprika
1 ltr hot vegetable stock
100g diced chorizo (optional)

Spray a large high sided pan with cooking spray and sweat the onions until they’re soft and translucent. Don’t let them brown.

Add the vegetables and stir well then add the paprika and stir through again.

Slowly add the hot stock then simmer until the vegetables are soft.

Meanwhile, dry fry off the chorizo until crispy and set aside.

Purée the soup in a processor or with a stick blender until smooth and serve with the crispy chorizo (if using) on top.
