Jammy Dodger Brownie

We had a guest on our kitchen today. Mel’s daughter Faye made this beautiful creation and we just had to blog it. What a fabulous recipe this is, we based it on Amy Treasure’s recipe for Blondies, but changed the chocolate as we had a craving for Brownies. The centre is gooey and fudgy and the jammy biscuit centres are chewy and delicious.

200g good quality dark chocolate
165g unsalted butter
200g caster sugar
3 large eggs
1.5 tsp vanilla extract
265g plain flour
100g mini Jammie Dodgers, cut in half
5 Jammie Dodgers for topping
10 mini Jammie Dodgers for topping

Preheat oven to 180ºC

Line a square (20×20) baking tin with baking parchment or you can use a heart shaped one like we have.

Put the chocolate and butter into a heatproof bowl and melt over a pan of simmering water. Once melted leave to cool for 5 minutes.

Add the sugar into the melted chocolate and butter mixture and stir until well incorporated.

Add the eggs and beat well, then add the vanilla extract, flour and salt and mix until no streaks of flour are visible.

Fold the mini Jammy Dodgers into the mixture and transfer the mixture into the prepared baking tin and top with the leftover biscuits to decorate.

Bake for around 25-30 minutes until there is no wobble when the baking tin is shaken.

Leave to cool completely in the tin then turn out, slice and serve.
