Cheese and Bacon Muffins

The aroma of freshly baked muffins is one of life’s small pleasures and these cheese and bacon ones are one of our favourites.

They have a delicious soft texture and are packed with flavour; cheese, bacon and paprika. Scrumptious!

Makes 12.

300 g self – raising flour

1/2 chicken stock cube, crumbled

Freshly ground black pepper

½ tsp hot paprika

80g butter

6 slices unsmoked bacon, cooked and chopped

250g mature cheddar cheeses, grated, 200g goes into the muffins and 50g for sprinkling on top

1 egg, lightly beaten

250ml milk

Extra hot paprika to sprinkle

Low – calorie cooking spray

Method

Preheat the oven 180c, gas 4, 350f

Spray a 12-hole muffin pan with the low – calorie spray

Sift the dry ingredients into a large bowl, rub in the butter until in resembles fine breadcrumbs.

Stir in the cooked chopped bacon and cheese and lightly combine.

Add the egg and milk.

Spoon mixture into the prepared muffin pan, sprinkle with the 50g of grated cheese and a little sprinkle of extra paprika.

Bake in the pre heated oven for 20 minutes.

Serve with butter or a wedge of extra mature cheddar and some chutney.
