As the temperature drops our minds turn to wintery comfort foods, what could be more comforting than sausages, potatoes and peas in a rich tasty curry sauce. Why not serve it with homemade flat breads.

This recipe is one of my store cupboard favourites and very quick and easy to put together after a busy day, it also reheats well for the next day if you happen to have leftovers.
Serves 4
8 low – fat pork sausages
Low – calorie cooking spray
2 large onions, sliced thinly
2tbs mild curry powder
400g can chopped tomatoes
350ml chicken stock
2 large potatoes, unpeeled and cut into thick wedges
1 red apple, cored and chopped
150g frozen peas
80g sultanas

Method
Preheat the oven to 200c, gas 6, 400f
Spray a large oven proof tin with the low – calorie cooking spray, place in the potato wedges and bake for 20 minutes turning regularly until golden brown.
Spray a non – stick lidded frying pan with the low – calorie cooking spray and place over a medium heat and cook the sausages until golden brown and cooked through, remove from the pan and place on a plate.
In the same pan, spray some more low – calorie cooking spray, add the onions and cook gently for 10 minutes until soft.
Add the curry powder and cook for a few minutes until it smells fragrant.
Stir in the tomatoes and stock, stir and bring to the boil, add the sausages back into the pan, place on the lid and cook for 20 minutes.
Add the potato wedges to the sausage and tomato mixture, stir gently.
Add the frozen peas and sultanas, stir to combine and heat through.
Serve with flat breads (see recipe below) or steamed rice and mango chutney.

Homemade Flatbreads
These quick and easy flatbreads are so delicious and simple to make you will be making them every week.

Makes 6
Low – calorie cooking spray
250g self – raising flour plus a bit extra for rolling out
2tbs vegetable oil
150ml water
1tsp fennel seeds
1/2tsp salt
1tsp ground cumin
1tsp ground coriander
Sprinkle of black pepper
Method
In a large bowl combine all the ingredients, stir well with a wooden spoon to mix everything together.
Turn out onto a lightly floured board and cut into 6 equal pieces.
Roll each piece out into a rough circle, they don’t have to be neat.

Heat a non – stick frying pan or a medium to high heat until very hot.
Spray the pan with the low – calorie cooking spray and cook the flatbreads one at a time turning regularly until cooked and golden brown.
Enjoy with your curries.
