Ginger and Date Oat Bars

These nutritional, slow-energy-release bars are packed with flavour and crunch, they make a great addition to packed lunches and are perfect for a pre- or post-exercise boost. Or chuck one in your bag for an on-the-go snack.

Makes 10

125g soft pitted dates

40g crystalised ginger

2 eggs

3tbs sunflower oil

1tsp ground ginger

175g porridge oats *

25g wholemeal plain flour *

Low – calorie cooking spray for the pan

(*Sub in gluten-free porridge oats and flour if necessary)

Method

Heat the oven to 180°C, gas 4, 350°F

Spray a 20cms square baking tin with low – calorie cooking spray and line with baking parchment.

In a food processor whizz the dates, ginger, eggs and oil until smooth.

Pour into a large mixing bowl and mix in the oats, flour and ginger.

Spread into the prepared tin and bake for 20 – 25 minutes until golden brown.

Cool in the tin, then slice into 10 pieces and cool completely on a wire rack.

Pack into an airtight container which will keep them fresh for 4 days.
