These delicious healthy tasty Thai – style burgers are full of flavour and make a nice change from beef. Spring onion, ginger, chilli and coriander all go very well together to create something that the whole family will love, serve with loads of salad and healthy fries.

Serves 4
500g lean turkey mince
4 spring onions, cleaned and finely sliced
1tsp lazy ginger
1tsp lazy garlic
1 red chili, deseeded and finely chopped
1egg yolk
Black pepper
Small bunch of fresh coriander, chopped
1tbs sunflower oil
4 ciabatta rolls (optional)
Fresh watercress, to serve

Method
Put the turkey mince, spring onions, garlic , ginger, chopped chilli’s, egg yolk, pepper and chopped coriander into a large bowl.
Form into 4 burgers. Heat the oil in a non – stick frying pan and fry the burgers for about 5 minutes on each side until golden brown and cooked through.

Serve the burgers in the rolls with some watercress, salad, healthy fries and a little sweet chilli or light mayonnaise if you like.
