Soft semolina pudding infused with warming cinnamon served with chargrilled pears, drizzled with lemon juice and honey and served with low fat crème fraiche.
I have never really been a fan of this type of pudding as I thought it would remind me of school dinners but this recipe has changed my mind; it was amazing! So grown ups remember ….. semolina isn’t just for children.

Serves 4
60g semolina
600ml skimmed milk
1tsp cinnamon
4 tsp caster sugar (or substitute sweetener to taste)
Low–fat cooking spray
4 pears, cored and cut into wedges
4 tsp lemon juice
4 tsp honey

Method
Place the semolina, milk and cinnamon in a small pan and cook over a low heat for 3 – 5 minutes until thickened.
Stir in the caster sugar and keep warm.
Heat a griddle or frying pan until hot. Spray the pear wedges with the low – fat cooking spray and cook, turning in the hot pan for 2 – 3 minutes until slightly softened and striped.

Serve the pears on top of the semolina, drizzled with the lemon juice, honey and a spoonful of low fat creme fraiche.
