Plum and Apple Oat Bake

This delicious wholesome dessert is packed full of healthy colourful apples plums and moist oats which are full of fibre. Baked oats are also a perfect warm and filling breakfast either can be enjoyed served with yogurt and honey, cream or even custard.

Serves 6

500ml semi – skimmed milk

6 cardamon pods, bashed

4 bramley apples, peeled cored and cut into pieces

200g jumbo porridge oats

1 egg, beaten

1tsp ground cinnamon

1tsp vanilla extract

1tsp baking powder

100g walnuts, roughly chopped

500g plums, stoned and chopped

Fat free natural yogurt, cream or custard to serve

Method

Preheat the oven to 200c, gas 6, 400f

Put the milk, cardamon pods and chopped apple into a small saucepan and gently bring to a simmer, cook gently for 10 minutes until the apple is soft. Remove from the heat, and leave to infuse for 15 minutes, remove the cardamon pods and discard.

Pour the apples and infused milk into a large bowl and lightly crush the apple pieces with the back of a fork.

Mix in the oats, egg, cinnamon, vanilla, baking powder, walnuts and plums pieces.

Tip into a 2-litre ovenproof dish and bake for 30 minutes until piping hot and golden brown.

Serve with natural yogurt, cream or custard.
