This is a lovely, protein packed lunch that is perfect for lunch boxes and will keep you fuller for longer. It’s also great for dinner as the evenings get lighter.
Make it the night before, the flavours build beautifully overnight.

Serves 4.
100g frozen edamame beans, defrosted and blanched
250g cooked, mixed grains (we used a pouch of Aldi’s Worldwide Rice & Grains Wholegrain and Quinoa)
250g baby plum tomatoes, halved
250g cooked beetroot, cubed
200g frozen sweetcorn, defrosted
10g toasted peanuts (not salted), chopped
Fresh mint to serve
For the dressing
2 tsp sesame oil
2 tsp olive oil
1 tsp apple cider vinegar
1 tsp soy sauce
Mix the dressing ingredients together.
Put the grains in a large salad bowl, toss the dressing through the grains, making sure that they’re all separated.

Add the remaining ingredients, gently stir together, scatter over the mint leaves and serve.
