Dr Pepper Chicken

Succulent chunks of lean chicken, peppers, onions, sugar snap peas and baby sweetcorn all cooked together in a rich and full of flavour sauce. 4 of your 5-a-day in just one dish!

Serves 4

4tbs tomato puree

120g passata

1tsp paprika

1tsp lazy garlic

2tsp Worcestershire sauce

1tbs dark soy sauce

2 tbs balsamic vinegar

1tsp dried mixed herbs

330ml Dr Pepper Zero

Low – calorie cooking spray

4 skinless and boneless chicken breasts, cut into large chunks

3 peppers, (mixed colours) deseeded and cut into bite – size chunks

1 large onion, chopped

200g sugar snap peas

200g baby sweetcorn, cut in halves length ways

Mix the tomato puree, passata, paprika, garlic, Worcestershire sauce, soy sauce, balsamic vinegar, dried herbs and Dr Pepper together and set aside.

Spray a wide, deep non-stick frying pan with low-calorie cooking spray and place on a high heat.

Add the chicken, peppers and onion and stir-fry for 5 minutes or until lightly browned. Pour over the sauce and bring to the boil. Reduce the heat to medium and simmer for 10 minutes, stirring occasionally.

Add the sugar snap peas and baby sweetcorn and cook for another 10 minutes or until the sauce has reduced and thickened a little and the chicken is tender and cooked through.

Season to taste with salt and pepper, serve with rice or mashed potato
