Need some inspiration for lunch?
This really couldn’t be easier or tastier. Packed full of Omega 3, iron and vitamins, it’s a power-packed lunchbox filler.
Serves 2.
1 tin mackerel fillets in mustard sauce
150g frozen peas, defrosted
250g cooked salad or new potatoes
1/2 fennel bulb, sliced thinly
Small bunch of dill
1 lemon, 1/2 juiced and 1/2 in wedges for serving
Large handful of baby spinach
2 tbsp fat free Greek yogurt
Seasoning
Add all the ingredients to a large salad bowl and gently mix through to combine.
Season to taste and serve with the lemon wedges
