Prune and Granola Cake

My Aunt always used to say there was nothing wrong with eating cake for breakfast, and I could not agree more. This cake has delicious soft prunes, which are full of fibre, crunchy granola with cake in between.

All it needs is strong cup of tea or coffee and that is not a bad way to start the day, any leftover cake will freeze well or enjoyed with custard

Cuts into 12.

100ml buttermilk (if you don’t have any buttermilk, you can make your own by adding 1tsp lemon juice to 100ml whole milk)

125g butter, softened, plus extra for greasing the tin

410g pitted prunes in juice, drained

200g caster sugar

200g plain flour

½ tsp baking powder

2 medium eggs

1tsp vanilla extract

200g of your favourite granola (I used Lizi’s low sugar granola)

Method

If you’re making your own buttermilk, do this first to allow it to thicken.

Heat the oven to 180c, gas 4, 350f, butter and line the base of a 20cms x 25cms baking tin and be sure to butter the sides well.

Roughly chop the prunes, then tip them into the tin and spread them out evenly.

Put the butter, sugar, flour, baking powder, eggs, buttermilk and vanilla in a bowl and give everything a good whisk, using and electric mixer, until the mixture is super – smooth and shiny, this should take about 2 minutes.

Pour the mixture over the prunes and spread out evenly.

Top with the granola, pressing it gently down onto the batter so it sticks and bake for 40 – 45 minutes, in the meantime, pop on the kettle and get your first hot beverage of the day ready.

When the cake is baked a skewer inserted into the middle should come out clean.

Leave the cake in the tin for 5 minutes then either turn it out or cut it into squares in the tin and lift the squares out.

What a delicious way to start your day.
