Happy National Vegetarian Week.
This very easy dinner is full of fibre vitamin C iron and contains 3 of your 5 a day.
Kedgeree is thought to have originated with the Indian rice-and-bean or rice-and-lentil dish khichuṛī, traced back to 1340 or earlier. This veggie version absolutely does justice to the Indian roots of this delicious dish.

Serves 4.
350g long grain brown or white rice
150g green beans, trimmed and halved
100g thin asparagus tips
4 medium eggs
Low – calorie cooking spray
2 onions, sliced
1tsp lazy garlic
1 Level tbs medium curry powder
1tsp ground turmeric
2 bay leaves
100g spinach
100g cherry tomatoes, halved
Small bunch of fresh coriander, chopped
Small bunch of fresh parsley, chopped
1 red chilli, sliced
1 lemon, cut into wedges

Method
Rinse the rice under cold running water, rubbing with your fingers to remove any excess starch. Cook following the pack instructions, then drain well.
Bring another pan of water to a simmer. Cook the green beans for 2 minutes, then transfer to a bowl with a slotted spoon. Set aside, then cook the asparagus for 2 minutes, drain, set aside.
Boil the eggs in the same pan of water for 7 minutes, then drain and transfer to a bowl of cold water to cool.
Meanwhile, heat a large frying pan over a medium heat, spray with the low – calorie cooking spray, fry the onions for 10 – 15 minutes until golden. Add the garlic, curry powder, turmeric and bay leaves and cook for 1 minute more.
Stir in the spinach, tomatoes and a splash of water and cook for another 5 minutes until the spinach has wilted.
Fold the cooked rice, green beans and asparagus through the spinach mix and cook for a few minutes until the rice has warmed through.
Drain and gently peel the eggs, the slice in half, top the rice mixture with the eggs, coriander, parsley and chilli.
Serve with the lemon wedges on the side for squeezing over.
👩🏼🍳 Chef’s Note; To save time use a pouch of microwave brown rice instead of cooking rice from scratch, cook following the packet instructions before folding through with the green beans.
