Turkey Tortilla Pie

Warming hearty and full of goodness this all-in-one dinner is easy to prepare and quick to clear up afterwards. Perfect for midweek winter dining.

This recipe is low in fat, high in fibre contains 6 of your 5-a-day

Serves 4.

Low – calorie cooking spray

2 onions, finely chopped

150g mushrooms chopped

1tbsp ground cumin

500g turkey mince

1tbs chipotle paste

400g can chopped tomatoes

400g can kidney beans, drained and rinsed

1098g can sweetcorn, drained

2 wholemeal tortillas, cut into triangles

50g low – fat mature cheddar cheese, grated

4 spring onions, finely sliced

Method

Heat a deep lidded saucepan, spray with the low – calorie cooking spray and cook the onions and mushrooms for 8 minutes until soft. Add the cumin and cook for 1 minute more. Stir in the mince and a bit more low – calorie cooking spray if needed.

Turn up the heat and cook for 4 – 6 minutes, stirring occasionally until the mince is browned.

Stir in the chipotle paste, tomatoes and half a can of water and simmer for 5 minutes.

Mix in the beans and sweetcorn and cook for few minutes until thick, piping hot and the mince is cooked through.

Heat the grill to high, transfer the mince to an oven proof serving dish and arrange the tortilla triangles randomly on top, scatter over the cheese and grill for a few minutes until the topping is crisp, taking care it doesn’t burn.

Sprinkle with the spring onions and serve with peas or a green salad.
