Delicious hot smoked salmon, warm new potatoes, red onion and fresh watercress all lightly dressed in a yogurt & mint dressing with a hint of lemon.

This is such a healthy lunch box filler but works just as well when you’re lunchtime entertaining.

Serves 2
300g small new potatoes
150g hot smoked salmon, flaked
½ small red onion, sliced
2 handfuls watercress
150ml low – fat natural yogurt
½ lemon, juiced
Small bunch of mint, chopped
Salt and black pepper

Method
Steam or boil the new potatoes until just tender, about 15 minutes.
Toss with the salmon and onion while still hot.
Divide the watercress between 2 plates and pile the salmon and potatoes on top.
Mix the yogurt, lemon juice and mint and season with salt and pepper.
Drizzle over the salad and serve.
