Chicken and Mango Chutney Sliders

This is so easy to prepare and lovely to eat ‘al fresco’.

A great family sharing platter of moist chicken, healthy & colourful salads and a light dressing.

Serves 4.

100ml natural yogurt

3tbs light mayonnaise

½ bunch of fresh mint leaves, finely chopped

1 small red onion, finely chopped

1 small red chilli, deseeded and finely chopped

½ cucumber, finely chopped

½ small bunch fresh coriander, finely chopped

1 chicken, roasted and left to get cold, I used chicken breasts

3 little gem lettuces, halved lengthways

Bunch of radishes, cleaned and cut in half, leaving on the stems

4tbs mango chutney

4 wholemeal rolls, halved

Method

Mix the yogurt, mayonnaise and mint together in a small bowl, then season and set aside.

Combine the red onion, chilli, cucumber and coriander in a separate bowl.

Slice and shred the cooked and cooled chicken, to save time you could use an already cooked rotisserie chicken if you prefer.

Serve the cooked chicken, yogurt sauce, onion and cucumber salad, lettuce, radishes, mango chutney and wholemeal rolls on a big sharing platter and let people serve themselves.

Any left-over chicken and salads can be eaten on the side.
