Indian Spiced Patties with Tomato Salsa

These healthy and succulent Indian spiced burgers are gently cooked then served with the light and fresh Tomato, Onion, Mint and Lime Salsa.

They are delicious on their own but can be served in a mini naan to compliment the Indian flavours, a burger bun or if you’re going for guilt-free go bun-less and serve with little gem lettuce leaves.

Serves 4.

500g Lean 5% Mince beef

1tbs curry powder

1 small red onion, finely chopped

½ tsp lazy garlic

Small pack fresh coriander, chopped, plus a few leaves for garnish

Low – calorie cooking spray

Salt and pepper

For the Tomato Salsa

½ cucumber, diced

3 tomatoes, finely chopped

1 small red onion, finely chopped

1tbs fresh mint, chopped

Juice of 2 limes

Method

The day before, put the beef, curry powder, onion, garlic and coriander onto a bowl and season with salt and pepper to taste.

Mix well using clean hands, divide into 4 portions or 8 if you prefer, and shape them into burgers.

Cover and chill overnight to let the spices infuse into the beef.

The next day, spray the burgers with low – calorie cooking spray and cook over a medium heat in a non – stick frying pan for 15 minutes or until tender and cooked through, you could also cook them under the grill for 10 – 12 minutes if you prefer.

Meanwhile, put all the salsa ingredients in a bowl and toss well.

Scatter the reserved coriander leaves over the burgers and serve hot with the salsa and your favourite salad or burger bun.
