Whole grains form the base of this healthy and filling salad, with all things green added; edamame beans, peas, avocado and herbs. It’s full of health giving ingredients and nutritious grains with lovely, salty feta crumbled on top and dressed in a light, zingy dressing.

Serves 4.
1 sachet cooked mixed grains (we used Aldi Good Grains Pulses and Grains), cook in the microwave for 2 minutes and leave to cool.
1 small little gem lettuce, chopped
150g cooked edamame beans
150g frozen peas defrosted
1 avocado, cubed
1/2 block feta, crumbled
1 small bunch flat leaf parsley, leaves roughly torn
1 small bunch fresh basil, leaves roughly torn
For the dressing;
2 tbsp extra virgin olive oil
1 tbsp red wine vinegar
1/2 tsp oregano
1/2 tbsp honey or agave
1 tsp Dijon mustard
Seasoning

Mix the dressing in a small lidded jar and shake well.
👩🏼🍳 Chef’s Note; You’ll only use about 1/3 so save the rest in the refrigerator.
Combine all of the ingredients of the salad and drizzle over the dressing. Wow! that’s easy!!
