A great healthy and easy lunch for children to make themselves or to make together with them.

Start them off on the healthy route with a choice of delicious toppings that they can chose from; sliced colourful peppers, tomatoes, red onions, sweetcorn, ham, prawns, olives, cheese and a few basil leaves.

Serves 2
4 crumpets
1tbs tomato puree
1tbs tomato ketchup
1tbs dried mixed herbs
salt and black pepper
2 small peppers, mixed colours, deseeded and sliced
1 small red onion, sliced
1 large tomato, sliced
¼ tsp lazy chilli (optional)
50g ham, chopped (or Quorn ham)
50g low – fat mature cheddar cheese, grated
A few fresh basil leaves, torn up

Method
Preheat the oven to 200c, gas 6, 400f
Place the crumpets in the toaster on a medium heat, I used No 3 on my toaster, cook then let cool down.
Place the crumpets on an oven proof baking tray.
Mix the tomato puree, tomato ketchup, dried herbs, salt and pepper, and chilli if using.
Spread this mixture over the crumpets and top with the peppers, onions, tomato slices and ham, or which ever toppings you choose to use.

It does not matter if a few bits of topping fall on to the baking tray.
Top with the grated cheese and place in the oven for 20 minutes until the toppings are cooked and the cheese is melted.
Sprinkle over the torn basil leaves and serve.
