Couscous Flitzáni

For those of you who didn’t know….. Flitzáni is Greek for ‘mug’ and we thought Couscous Flitzáni sounded so much more……. ummmm….. Greek! and fitting for this rather tasty, easy little lunch.

We’ve all tried mug cakes so here is a mug lunch. The ingredients obviously serve 1 but it’s easily doubled, tripled, quadrupled, made in a bowl and served for sharing.

Serves 1.

4 tbsp couscous
Boiling water
½ lemon, juice and zest
2-3 tbsp sweet drop peppers or piquant red peppers, chopped
40g feta cheese, crumbled
3 tbsp pomegranate arils
Fresh mint leaves, rolled and chopped
Seasoning

Put the couscous in the bottom of a large mug and pour over enough boiling water to cover. Cover the mug with beeswax wrap or clingfilm and leave to stand for 3-4 minutes.

Fluff with a fork and then add the lemon juice and zest and allow to cool.

Stir in the rest of the ingredients leaving a few pomegranate arils and a little feta to crumble on top to serve.
